The history of the Belgian waffle in our country is quite rich and tasty. A long time ago, in the kingdom of Belgium (1830-1930), a restaurant owner from Brussels had an idea to sell his waffles on the street.
It was so successful that he soon opened a shop where people could come and enjoy their delicious treat right away! And this way, the Belgian Waffle industry started…
But this wasn’t all. In 1958, one of his sons decides to put 2 slices of bacon inside each one, just like Americans do with burgers. Then, some years later someone gets the crazy idea of filling it up with chocolate chips and strawberries!
Filled with happiness, they start making these new types of waffles more often than usual ones and begin selling them under the name of “Bel-Gem Waffle” (From Belgium and gem, which is short for strawberry).
Since then, these waffles become a massive hit in our country, and we consider them to be an emblematic delicacy. They’re sold everywhere: on the streets, in supermarkets or at fairs like the famous Belgian Beer Weekend… And even though this festival has nothing to do with waffles, they of course sell there as well!
But today, Belgian waffles are sold all over Europe and even in Canada thanks to some of our compatriots who opened their own businesses abroad. HOW TO MAKE THE PERFECT BELGIAN WAFFLES?
After having explained in detail the main steps of the Belgian waffle process in our country, let’s talk about how to make them right! If you think about it, there are so many different recipes for this delicious treat. Some people add lemon juice, but some others use milk sugar instead…
And they can all be delicious depending on what you like! But here at Bubblews we prefer to follow the recipe that was written by La Maison du Chocolat (that’s a famous chocolate maker). So, if you’re looking for something simple and yummy too, try this one out:
– 7 oz (200g) flour (all-purpose flour or buckwhe flour)
– 1 pinch pure salt (to make sure the waffles get a good taste)
– 3 1/2 oz (100g) white sugar
– 2 eggs
– 1 tablespoon of baking powder (the “poudre à pâte” type)
– 7.1 fl oz (200ml) milk (at room temperature is best to avoid bubbles in your mix). It’s important not to use too much otherwise it won’t have the right consistency or else you’ll risk getting a different result. You can also add a bit more flour to avoid that problem if need be!
– 5 tablespoons melted butter + 10 tablespoons for greasing your iron after each waffle so they’t stick together when cooling down (or use cooking spray)
Optional: A bit of vanilla extract (a few drops will do the trick but avoid using too much or else it won’t stay on your waffle).
– Whisk together your flour and baking powder. And then create a little hole in the center of it before pouring in your milk + 2 tablespoons of melted butter + 1 egg (without separating the yolk from the white) + some salt for taste + vanilla extract if you want.
– Mix well until bubbles form. And keep adding milk, if need be, to get the right consistency! This shouldn’t happen though if you added enough, so trust us when we say this!
– Separate your egg yolks from the whites. Put the 2 of them in two different bowls and whisk them lightly with a fork so bubbles form. And then add them to your mixture!
– Stir in the remaining butter + sugar (for taste).
– Finally, add your flour little by little so you get a nice batter that flows easily through your waffle iron when it’s hot enough. If you’re using self-rising flour, just skip this step completely because it already has baking powder included!
Preheat up your waffle iron before pouring everything in. And if you don’t have an electric one or are not sure how long they take to preheat up, follow these steps:

– Preheat up your oven to 250°F (120°C), then turn it off. This way, you’ll have a warm temperature that will help your waffles cook faster without burning them!
– Place the batter in the middle of your iron so you don’t have to use too much but just enough to cover most of it. Let’s take this opportunity to talk about one thing many people are talking about… The shape of waffles!
Belgians, Dutch and Americans believe they are all different while some argue that they’re all very similar. But what’s true is that an american waffle has square edges while a belgian one has round ones.
And on top of that fact, Dutch waffles are a kind of cross between the 2 previously mentioned types, so they’re neither completely square nor round…
They tend to be a bit more hexagonal, with a few extra corners on top! But for this recipe you can use an american style iron or a belgian one.
– If you want your waffles golden brown and crispy on the outside but tender and soft on the inside like we do, then just wait until steam comes out of your iron before lifting it up (it’s important to lift it at that moment because if not the steam created by all of those bubbles will escape). That way, your waffle won’t burn as quickly as you’d think!
And voilà: You’ve made your first Belgian waffle! Don’t forget to top it off with whatever you prefer! Some people go for fruit, jam or syrup, others like chocolate sauce or whipped cream. You can also try adding some icing sugar on top of it… Or maple syrup if you want something sweet to kickstart your day!
– Follow the same steps for all subsequent waffles. And don’t forget: If your iron doesn’t have a light telling you when it’s hot enough and ready to cook, just wait until steam comes out so you’ll know when it’s heated up properly and good to go!
DIFFERENT TYPES OF BELGIAN WAFFLE IRONS
American style waffle irons tend to be smaller, with deeper grids and flatter surfaces than their Belgian counterparts. The American iron gets its name from the pre-heat indicator that lets you know when it is ready to cook.
Dutch Style Waffle Irons
A Dutch Iron is a cross between a Belgian and an American iron: It has deep pockets like a Belgian iron, but no handle and round plates like an American one. Like the American model, it can make either thick or thin pancakes depending on how much batter is poured in; however, the surface area of the Dutch Iron grid isn’t as large as those found on other irons due to its unique, aesthetically pleasing shape.
Belgian Style (Berkel) Waffle Irons
A Belgian Waffle Maker is made of cast iron and has deep pockets. It makes thicker (about one inch thick) and larger waffles than those made by the American type. They’re also usually deeper, making them easier to prepare, especially when using a batter that contains yeast or baking powder.
